Uttam and the gang…

t was 15 years ago today that Rathdown Park’s finest, Ronan Fleming, decided that the good people of Greystones deserved to enjoy some authentic Indian food.

Having already proven himself by setting up the Bombay Pantry in Glenageary 10 years before, Ronan pulled together a small crew of fellow award-winning chefs, and, in October, 2003, the doors of Indian Spice Company opened for the very first time on our main road.

Among that small, pioneering crew of chefs was Uttam Bisht, who is still there today. In fact, with Ronan having retired to his River Shannon hideaway, Uttam now runs the show.

So young, so full of hope…

“And it’s exactly the same now as it was back when we started,” he smiles. “We care passionately about Indian food, and, after 15 years here in the town, we think Greystones people do too. 

“Having worked in some wonderful kitchens back in New Dehli, where I learnt my trade, being here in Greystones all these years, it feels like a home away from home…”

The gang recently marked their 15th year serving the good people of Greystones, and it’s clear there’s every intention of serving the town for at least another 15 years more. After that, the staff will be allowed half a day off, to visit their families.

In the meantime, we caught up with Uttam to talk about those early days, the secret to Indian Spice’s staying power, and what it’s like to feed hungry, happy Greystonians each and every day…
