t was way back in March that an excited and delighted Derrick McGovern informed us that the long-standing vacant building beside Aldi on Mill Road had finally found its forever tenant.

The much-loved Base Wood Fired Pizza were keen to open their ninth outlet in sunny Greystones, and now, hey, they were about to make it so.

Only red tape had other ideas, and founder Shane Crilly found he needed those early morning splashes in The Cove to shake off each new delay.

“It feels great to be finally open,” he tells us this evening, his proud family by his side. “We just love Greystones, and having a Base here was always our goal. We just didn’t realise it would take us a few more months than we had planned…”

All’s swell that ends well, as the queues on this Thursday evening prove. Then again, handing out some free goodies will always draw a Greystones crowd.

“We’re having a soft opening for the weekend, to make sure that all the wheels are going round without any wobbles.

“And so far, it all seems to be rolling along just fine…”

That the Greystones gang are rolling their very own dough, created in-house and free from any artificial additives, is something of a big plus for a pizzeria, and it’s been a crucial ingredient in Base’s success, right from the very first branch opening back in November 2008. Since then, eight more Bases popped up all across Dublin and beyond before Shane finally got to Greystones.

We’ll be taking a look behind the curtain in January, to see how low this place can go.
